This easy salmon recipe is sooo yummy and brings on all the seasonal spice so it certainly feels festive. With all the intense holiday dishes rolling around, give this lighter recipe a try – trust me, it’ll taste delish and make you feel 💯
I start by pan frying the salmon in ghee, then slow roast it to make sure it is cooked through to medium and finally, if using the garlic butter, I broil the top so its slightly crispy and browned.
Tip: the roasted garlic butter top is optional. Leave it out if you want to go even lighter with this dish.
Ingredients:
salmon filet (6-8 oz)
sea salt to cover filet
1 tsp cloves
1 tsp nutmeg
1 tsp cardamom
1 tsp cumin
1/2 – 1 tsp five spice
stick of butter (I used European style)
2 roasted heads of garlic
flakey sea salt
Directions:
Preheat oven to 325
Combine all spices (I only had whole cloves so I ground them first w mortar & pestle)
Sprinkle the salmon all over with sea salt then gently massage the spice mixture all over carefu not to rip flesh
Heat a cast iron oven proof dish over high heat and add ghee or fat of choice
Pan fry salmon skin side down for 2-3 min
Move to over to oven & bake for 8-10 minutes depending on your preference for doneness
Turn on broiler and let top brown slightly, 2-3 minutes
Enjoy with your favorite vegetables and carbs for a balanced meal 🙂 I used white rice and roasted zucchini
